In Calabria, chilli pepper is used as a condiment (fresh, in oil or dried) or as an ingredient for many recipes: first courses, sauces, sausages and, recently, it has also been used in the preparation of desserts, liqueurs and beers. Some of these specialties have become a symbol of the bond of this land with the spicy taste. First of all the ‘Nduja, the spreadable salami made with minced pork to which various spices and a good quantity of chilli are added. It is usually enjoyed on slices of hot bread or as a base for sauces, sauces or in combination with cheeses. The soppressata is equally important as it is one of the “noble” cured meats of tradition and one of the most appreciated. It is processed with ingredients of great value, i.e. the best meat deriving from pork legs and then mixed with herbs and spices. The chilli pepper is essential to give the cured meat its typical flavor and colour. If, on the other hand, we want to preserve their freshness and aroma throughout the year, it is possible to preserve the peppers in oil. The Peperoncino finds in Calabria the ideal environment for its cultivation, thanks to the microclimate and the orographic characteristics of the land.

2023 Giuseppe La Carta Exhibition - CLEMENTINE OF CALABRIA
A cross between bitter orange and mandarin, Clementines perhaps come from Algeria (according to one of the most accredited hypotheses, their name would recall that of Father Clément Rodier of Misserghin, in whose garden they were found). Cultivated in Italy since the 1930s, they have found one of their ideal habitats in Calabria. The areas of greatest production are concentrated in the plain areas existing in the region and are: the Piana di Sibari and Corigliano in the Cosenza area, the Piana di Lamezia in the Catanzaro area, the Piana di Gioia Tauro-Rosarno and the Locride in the Reggio area. Clementine of Calabria is refreshing and diuretic and has a high content of available sugars. In the kitchen, it can be eaten plain or used to prepare juices, syrups, sorbets, jams. The fruit is also used in cosmetics in the preparation of toning lotions and skin masks.

The IGP Lemon, cultivated for centuries in the Rocca Imperiale area, has differentiated itself as belonging to the Femminiello Comune cultivar, attributable to the botanical species Citrus Limon, and is known in the area under the name of “Antico or Nostrano di Rocca Imperiale”.

2023 Giuseppe La Carta Exhibition - RED ONION OF TROPEA
The red onion of Tropea is the name given to the red onion (Allium cepa) grown between Nicotera, in the province of Vibo Valentia, and Campora San Giovanni, in the municipality of Amantea, in the province of Cosenza, and along the Tyrrhenian coast. It is mainly produced between Briatico and Capo Vaticano. It is composed of various fleshy concentric tunics of white color and with a red envelope; it has been cultivated in these areas for over two thousand years, imported by the Phoenicians, and for over a century, now combined with tourism, it contributes to the socio-economic development of the area. The sweetness of the vegetable seems to depend on the particularly stable microclimate in winter, with no sudden changes in temperature due to the meekness exerted by the proximity of the sea, and on the fresh and silty soils, which determine the valuable characteristics of the product. The shape is round or ovoid. Plinio il Vecchio, in his Naturalis Historia, refers to the red onion as a remedy to cure a series of ailments and physical ailments.

In Italy the production of citrus fruits (oranges, lemons, tangerines, clementines, bergamots, chinotto) is concentrated in the southern regions, Calabria produces about a quarter of the national production. The citrus-growing area in Calabria is approximately 32,000 hectares (24% of the national citrus-growing area) distributed among approximately 44,000 companies. Reggio Calabria is the province with the highest number of citrus farms followed by that of Cosenza. These two provinces, thanks to their large territorial dimension, produce a quantity that is always higher than 70% of the total for each species produced. In all the provinces the most cultivated species is the orange.

Each of the splendid regions of Calabrian excellence have a stand out product that its known for its recognisable flair and superior quality. For this project we have twinned Capo Vaticano and the FICO D’INDIA. A cactus fruit also known for its medicinal qualities in treating diabetes high cholesterol and generally strengthening the immune system. The prickly pear of Capovaticano is grown in the Region of Calabria Southern Italy province of Vibo Valentia, mainly within the Mount Poro and Capovaticano area at altitudes of 100-600 meters. The fruit is originally from Mexico is South Central America. A fun antidote: Christopher Columbus thought he was discovering India when he arrived in South America and hence that is where the name mistakenly comes from Indian Fig!

The denomination “Fichi di Cosenza” designates exclusively the dried fruit of the domestic fig “Ficus carica sativa”, belonging to the “Dottato” (or “Ottato” variety). Their skin is initially pale green, then turns greenish yellow. The pulp is amber, medium firm and slightly aromatic. The juice is not very dense, however, when ripe, it sometimes comes out of the ostiol, dropwise. The taste of the fruit is sweet and honeyed. The geographical area of production of the “Fichi di Cosenza” is delimited, in a portion equal to about one third of the Province of Cosenza, to the north by the broad southern slope of the Pollino massif, which prevents contact with the Basilicata region, while to the South by the Sila and by the rivers that descend from it towards the South-East, the Nicà river, and towards the South-West, the Savuto river. The area is between 0 and 800 meters of altitude, excluding slopes of more than 35%.

In Calabria il peperoncino viene utilizzato come condimento (fresco, sott’olio o essiccato) o come ingrediente per molte ricette: primi piatti, sughi, insaccati e, recentemente, è stato impiegato anche nella preparazione di dolci, liquori e birre . Alcune di queste specialità sono diventate simbolo del legame di questa terra con il gusto piccante. Primo fra tutti la ‘Nduja, il salame spalmabile fatto con carne di maiale macinata a cui vengono aggiunte varie spezie e una buona quantità di peperoncino. Solitamente si gusta su fette di pane caldo o come base per salse, sughi o in abbinamento a formaggi. Proprio di recente il peperoncino è l’elemento principe della NDUJA VEGANA. Ispirata alla tradizionale ‘nduja, la nostra versione vegana è una deliziosa combinazione di pomodori dolci e peperoncini piccanti. È una pasta densa che aggiungerà calore, sapore e umami a qualsiasi piatto. Altrettanto importante è la soppressata, uno dei salumi “nobili” della tradizione e tra i più apprezzati. Viene lavorato con ingredienti di grande pregio, ovvero la migliore carne derivante dalle cosce di suino e poi impastata con aromi e spezie. Il peperoncino è fondamentale per conferire al salume il suo tipico sapore e colore. Il Peperoncino trova in Calabria l’ambiente ideale per la sua coltivazione, grazie al microclima e alle caratteristiche orografiche del terreno.

Incrocio tra arancia amara e mandarino, le clementine provengono forse dall’Algeria (secondo una delle ipotesi più accreditate, il loro nome ricorderebbe quello di padre Clément Rodier di Misserghin, nel cui giardino furono trovate). Coltivati in Italia fin dagli anni ‘30, hanno trovato in Calabria uno dei loro habitat ideali. Le zone di maggiore produzione si concentrano nelle zone di pianura esistenti nella regione e sono: la Piana di Sibari e Corigliano nel Cosenza, la Piana di Lamezia nel Catanzarese, la Piana di Gioia Tauro-Rosarno e la Locride nella zona Reggina. La Clementina di Calabria è rinfrescante e diuretica e ha un alto contenuto di zuccheri disponibili. In cucina può essere consumata al naturale o utilizzata per preparare succhi, sciroppi, sorbetti, marmellate. Il frutto è utilizzato anche in cosmesi nella preparazione di lozioni tonificanti e maschere per la pelle

Il Limone IGP, coltivato da secoli nella zona di Rocca Imperiale, si è differenziato come appartenente alla cultivar Femminiello Comune, riconducibile alla specie botanica Citrus Limon, ed è conosciuto nella zona con il nome di “Antico o Nostrano di Rocca Imperiale” .

2023 Giuseppe La Carta Exhibition (Italiano) - CIPOLLA DI TROPEA
La cipolla rossa di Tropea è il nome dato alla cipolla rossa (Allium cepa) coltivata tra Nicotera, in provincia di Vibo Valentia, e Campora San Giovanni, nel comune di Amantea, in provincia di Cosenza, e lungo la costa tirrenica . Viene prodotto principalmente tra Briatico e Capo Vaticano. È composto da varie tuniche carnose concentriche di colore bianco e con involucro rosso; è coltivato in queste zone da oltre duemila anni, importato dai Fenici, e da oltre un secolo, oggi abbinato al turismo, contribuisce allo sviluppo socio-economico della zona. La dolcezza dell’ortaggio sembra dipendere dal microclima particolarmente stabile nel periodo invernale, senza sbalzi termici dovuti alla mansuetudine esercitata dalla vicinanza del mare, e dai terreni freschi e limosi, che determinano le pregiate caratteristiche del prodotto . La forma è tonda o ovoidale. Plinio il Vecchio, nella sua Naturalis Historia, fa riferimento alla cipolla rossa come rimedio per curare una serie di malanni e malanni fisici.

In Italia la produzione di agrumi (arance, limoni, mandarini, clementina, bergamotto, chinotto) si concentra nelle regioni meridionali, la Calabria produce circa un quarto della produzione nazionale. La superficie agrumetata in Calabria è pari a circa 32 mila ettari (24% della superficie agrumicola nazionale) distribuita tra 44.000 aziende circa. Reggio Calabria è la provincia con il maggior numero di aziende agrumicole seguita da quella di Cosenza. Queste due province, grazie alla loro elevata dimensione territoriale, producono un quantitativo sempre superiore al 70% del totale per ogni specie prodotta. In tutte le province la specie più coltivata è l’arancio.

2023 Giuseppe La Carta Exhibition (Italiano) - FICODINDIA DI CAPO VATICANO
Ogni una delle splendide regioni dell’eccellenza calabrese ha un prodotto di punta riconoscibile per il suo stile caratteristico e la sua qualità superiore. Per questo progetto abbiamo accoppiato Capo Vaticano e il FICO D’INDIA. Un frutto di cactus noto anche per le sue proprietà medicinali nel trattamento del diabete, del colesterolo alto e per rafforzare in generale il sistema immunitario. Il fico d’India di Capovaticano viene coltivato nella Regione della Calabria, nel sud Italia, nella provincia di Vibo Valentia, principalmente nella zona del Monte Poro e di Capovaticano a quote comprese tra i 100 e i 600 metri. Il frutto è originario del Messico e dell’America centrale. Un aneddoto divertente: Cristoforo Colombo pensò di aver scoperto l’India quando arrivò in Sud America e da qui deriva il nome errato di Fico d’India.

La denominazione “Fichi di Cosenza” designa esclusivamente il frutto essiccato del fico domestico “Ficus carica sativa”, appartenente alla varietà “Dottato” (o “Ottato”). La loro pelle è inizialmente verde pallido, poi diventa giallo verdastro. La polpa è ambrata, di media consistenza e leggermente aromatica. Il succo non è molto denso, tuttavia, a maturazione, a volte fuoriesce dall’ostiolo, goccia a goccia. Il sapore del frutto è dolce e mielato. La zona geografica di produzione dei “Fichi di Cosenza” è delimitata, in una porzione pari a circa un terzo della Provincia di Cosenza, a nord dall’ampio versante meridionale del massiccio del Pollino, che impedisce il contatto con la regione Basilicata, mentre a Sud dalla Sila e dai fiumi che da essa discendono verso Sud-Est, il fiume Nicà, e verso Sud-Ovest, il fiume Savuto. L’area è compresa tra 0 e 800 metri di quota, escluse pendenze superiori al 35%.
